Sea salt, to taste

Freshly ground pepper, to taste


Instructions:

  1. Preheat your oven to 200°C (fan-forced).

  2. Wash and cut the potatoes into wedges, leaving the skin on for added texture and flavor.

  3. In a large mixing bowl, combine the potato wedges with extra virgin olive oil, lightly toasted crushed cashews, dried oregano, garlic powder, sea salt, and freshly ground pepper. Toss until the potatoes are evenly coated.

  4. Spread the potato wedges on a baking sheet lined with parchment paper, ensuring they are in a single layer for even cooking.

  5. Bake in the preheated oven for 35-40 minutes, or until the wedges are golden brown and crispy on the outside, and tender on the inside. Halfway through baking, give the potatoes a gentle toss to ensure even browning.

  6. Once done, remove from the oven and let them cool slightly before serving.
